WTK the best and healthy oil for frying chicken.

Chicken oil, of course!! :D

I've not deep fried (yet) but from what I've seen the best is vegetable oil.

Think it depends on if you are deep frying with say a Turkey Fryer set up or frying in cast iron skillet. Either way it's a balance of finding a oil with a good smoke point and one that is healthy.

I'll use Avacado oil if I'm pan frying, however I'm not going to buy 6qts of it for a large batch I'll put through a turkey fryer set-up. The last time I bought deep fryer oil I bought a 35lb jug of organic sunflower oil for like $60-65.

It should not impart any noticable flavor, most of your flavor transfer comes from using unrefined oils, think olive oil, sesame oil, coconut oil, etc.

You can get a big jug of it most anywhere for probably $30-40, give or take.
As long as you do not heat it above the smoke point, you can filter it and reuse it several times.

You flavor the chicken if you want seasoning. But be aware, if you want to reuse the oil, it’s gonna have that seasoning in it
 
"Frying" and "healthy" do not belong in the same sentence.

Onions are a vegetable, veggies are healthy... frying can be unhealthy. So they cancel each other out. Therefore onion rings are a negative food...its like eating nothing.

As stated above. Lard or peanut oil. If it’s on the stove it’s lard. If it’s in my turkey fryer it’s peanut oil. If you want to get healthy....stop frying. Just saying. What you seem to be looking for is a “light” cigarette or beer. No such thing. It’s still a cigarette and a beer and fried.
 
I am cooking chicken in my Grandmother electric feet fat fryer as made in the 50's.

I am guess that due to the age of my deep fat fryer that it was built for lard.

If I change to lard can I use it multiple times?

Where do you buy leaf lard from?

I buy Smithfield lard at Food Lion for frying and biscuits.

For my ethnic recipes, I buy pork fat from the butcher (Publix or Lowe's) and render it myself.

I can remember Ike as the President.

I know you can buy lard at any store but my family has some issues heart problems.

Maybe the leaf lard is the way to go?

As a child of The South I love my fried food.

Know where you're coming from, the wife stopped using lard years ago, now it's Canola oil or sum such, I don't even want to talk about the no red meat phase I had to endure , she assures me it's for my on good, but sometimes I think her own personal form of psychological torture

Fear not lard... As with everything, moderation is the key. My favorite food is southern chicken, fried in lard. I could eat it every day, but don't. It is included in the quarterly rotation.

From experience, coconut oil does not add much in the way of flavor but, has low smoke point ( not particularly helpful for frying).
 
I use olive oil when pan frying supposedly it's better for you. Peanut oil when using deep fryer.
 
The best oil for frying anything anytime is coconut oil. I buy it by the 5 gallon pail. It has a very low melting point and a very high flash point. It is loaded with good fats. It doesn't harm the flavor either. I also use it in some salads. You can just eat a spoon full if you want to. It's better tasting than olive oil straight up. Cooled below 72 degrees you can eat it like ice cream. Drizzle it with chocolate or caramel or honey. The keytones are direct brain food. :)

Clean oil.

Old(er), dirty oil can mess up some otherwise good cookin'

As long as it is virgin olive oil and not processed you can buy it anywhere and any name brand is as good as the next.

You can pay $20 for some weird brand in a health food store or buy a gallon for $16 at Sams club. Same stuff.

It really is the jack of all trades when it comes to oils. I put a scoop in my coffee and protein powder shake every morning.

On a side note and trying to keep this off topic friendly it also makes a great lubricant for bedroom encounters.

It actually helps restore ph balance in women and can prevent (and in some cases cure) certain infections the fairer sex is prone to.

And as stated already it tastes great.

Edit to add I’ve never tried to strain and reuse but any oil can be strained and reused so long as you didn’t hear it to smoke point.

Storing would be in a jug like you do the new. Put it on the shelf (or on the nightstand by the bed).

You flavor the chicken if you want seasoning. But be aware, if you want to reuse the oil, it’s gonna have that seasoning in it

Frying some taters at the end will help clean the oil.
 
i use cheap olive oil.
all those "grades" are fake.

It is a chicken wing so just use vegetable oil and don't overthink it. If you want healthier grill or smoke them.

Or you par cook them and then oven bake them. I make killer buffalo wings using this method. If I did not tell you they were baked you would swear they were fried.
