Doing a 3 lb tri-tip tonight. Just created a little marinade/smear. I'll post some pics of cooking over hardwood charcaol and actual wood later.

Mostly because I have always done that when cooking over coals. Not sure if it matters and my wife put it on the grill before I got off shift this morning and she put it fat side down so I wanted it to be on the up side.Why do you need to flip it? Is that something grill specific? I just keep the fat side up and let all that goodness baste the meat.

Sounds like a great recipe! I have made some hot honey chipotle wings that you'd probably like then.There is some butter, Frank's Red Hot, a tiny bit of Sweet & Spicy B'cue sauce to thicken it up a bit and a bottle of Hot Peri-Peri Hot sauce. So they were built for flavor depth and eating quantity. They were medium with a building heat. Not to spicy at all. I usually only make dangerous wings when it involves a large quantity of beer and some friends.
