What's for dinner?

Just put on some ribs for today's dinner. Maybe there will be some left overs for supper. 2 racks for the wife and me, 2 racks for @BatteryOaksBilly and RS. Billy and RS took care of me and kept me fed so I didn't wither away while my wife was in Texas. Hope these turn out good. Even if they don't Bullet and Pixie will be two happy dogs.

Yea I didn't think that was going to work well. Burned mashed potatoes. I wanted to take pic and post it but... (I know better) Oh well, did give me a break from cooking. Peas and chicken were good.

I've been wanting to make shrimp tacos for a while and finally decided to do it. Because I was thinking tacos like we've been making (seasoned beef or chicken, lettuce, tomatoes, cheese, crunchy shells), I decided to check duckduckgo for actual shrimp taco recipes. I found what turned out to be a great one.

Raw shrimp, salt and peppered, and coated in corn starch. Fried them hot and fast in clarified butter.
Finely chopped raw cabbage and finely grated radishes.
The sauce was equal parts mayo, sour cream, and sriracha.
These ingredients were set on a warm flour tortilla and then a little squeeze of lime across it.

I was really surprised at how good these were, considering the ingredients. I don't get excited about raw cabbage or radish. I've never tried sriracha sauce. And usually, when eat the little store bought shrimp, they are the pre cooked variety. I almost went with those, but am glad l decided to cook the raw ones (something I've not done before).

Broiled ribeyes; baked potato; sauteed mushrooms with red wine; mixed baby tomatoes. Pretty simple stick-to-your-ribs meal in defiance of the weather.
 
Fired up the griddle tonight.

Onions and cabbage in clarified butter, then the holy grail of deer meat...the backstrap.

Seasoned with salt, pepper, and olive oil, then seared on all sides. Got damn was this good.

Just a pot of gravy with hot Italian Sausages. Will serve it over thin spaghetti and a nice side salad.

We're headed out of town so didn't have much in the fridge tonight, but a bunch of leftovers. Turned that into one of the best meals I've made at home in a while.

Creamy mushrooms and chicken

- left over roasted chicken, pulled into big chunks tossed into the wok with a bit of sesame oil and sea salt. Just long enough to get GBD and set aside

- 1/2 stick of butter and some big ol onion petals, garlic and a couple grinds of pepper 'til onion was just about translucent

- tossed in a container of sliced fresh baby portobello mushrooms and a little more butter

- added about 5 slices of leftover bacon chopped up

- got the 'shrooms done and poured in ~1.5 cups of heavy cream and about 1/2 cup fresh grated Parmesan

- added the chicken back in and cooked it down 'til it was nice and thick

Man, that was good. Served with a side of Lipitor

Did this again tonight, but used hard shells, per wifey's request.

The awesome flavor and textures were still there, but I think I prefer the warm tortillas over the crunchy shells. But, BUT, a broken shell gave me an idea. Nachos.

I can see me making nachos out of these ingredients.

Marinated steak tips for dinner tonight (maple bourbon marinade and a whiskey something marinade). Cubed some for kabobs and grilled the rest. Not pictured: corn on the cob and potato salad.

Cooked to a perfect medium. My favorite thing I’ve cooked in a while.
