What's for dinner?

Yum! Salmon... I plan to pick up some oysters from our seafood purveyor this week. I will check to see if there is salmon available too.

We baste ours, the salmon, with a rum & brown sugar glaze throughout the smoking process. (Need a napkin, drooling now.)
 
Oh, and reheating last nights' szegedin gulasch for dinner tonight.

It is a Hungaian stew of pork shoulder, smoked pork sausage, fresh cabbage, sauerkraut and baby potatoes in a paprika gravy.

That sounds good. I’ve found with this pellet grill it performs better with less opening and closing so I am having to baste less and alter some pf my normal techniques. But I’ve still got the Green Egg so with some things I go old school.

Rum? That sounds good. I may try that next time.
 
That has to be the most realistic photo of basted ribs ever ! Every single tasty detail is showing and they look awesome...……….homemade baste or sauce? Ingredients?
Just a dry rub and then smoked 'em for like 5 hours

Nice fat glisten. I almost bought a full prime packer brisket as Costco today but I don't have time to smoke it in the next week. It was only like $65
 
Do you make your own crust?

Yes. I make it with oo flour. I have different dough recipes for NYC & Neapolitan. I also change it depending on if I am cooking in a 550 degree standard oven or 800 degree pizza oven. I also make my own sauce. It is a no cook sauce made from san marzano tomatoes.

Back straps seasoned with tony chacheres herbs and spices, red skin smashed potatoes and brown gravy with honey butter biscuits and corn. The gravy was from a packet that I put in the cast iron after cooking the deer and mixed in beef broth.
Oh and the deer was cooked in bacon grease. Seriously the best food I've made in a long time.

Had some Blue Point and Chesapeake Oysters on the half shell with some Champagne for a starter. Going to finish with some USDA Prime NY Strips and Broccolini. Will update with pic of the steak later. LOL

Tonight was instant pot pot roast. Taters, baby carrots, beef broth, cream of mushroom soup, lots of salt and ground pepper.

I rubbed my meat with olive oil, then coated with salt and pepper before searing both sides. Tossed everything in. Set to 60 minutes and sealed.

Tender is the word of the day.
 
Someone had mentions The Butcher's Block in Lexington, so while at High Rock lake this past weekend I checked them out. Nice place, great looking meat and three varieties of oysters in stock. Grabbed some beef, fish and oysters for the grill and smoked a rack of goat ribs for me to eat on all week. Probably a little bit over cooked, but ok. Used the Woo Rig with a different shaped plate separator. Also cooked much faster than I expected. If I had waited another few minutes to check on them it might have been pizza night. :eek:

Corned beef and cabbage. I corned the beef for 7 days. Then cooked it up today! Super tasty. I think I am going to do some pastrami later this month.

But, one thing they have figured out is wing night. Bourbon honey glazed wings with veggies boiled to mush. Oh well, can't win em all ;)

Those don’t look half bad. Now if they could just provide you some real hot sauce they’d be on to something. And where is the huge bowl of freaking blue cheese? That plate is un-American. Damned barbarians running the kitchen there huh?

They actually are pretty good. Wait till Hibachi night and I'll show it to ya. It dont look like much, but it's pretty good too lol.
Beats the ever lovin hell out of eatin MREs for a year lmao
