What's for dinner?

Going to a pot luck tomorrow so I threw this together. Pull Pork BBQ and Tofu BBQ for the vegetarians. Complete with 2 different homemade BBQ sauces. Someone else is supplying the sides.

Was in Charleston yesterday with my brother and SIL. When we decided to get something to eat, we were near the Early Bird Diner. We have eaten here several times before and it is great. It was featured on the food channel with that spikey head guy that drives the Camaro.

It is a small place and mostly college age kids out front waiting on people. Their chicken and waffle is the stuff, some of the best chicken ever.

I'll start grillin the squash in a little bit and add fresh green beans and cantaloupe.

Been doing drumsticks and thighs with spicy dry rub over and open fire and coals a lot in the last year at the cabin. Something fun and a little primal about eating like cavemen around the fire pit with an adult beverage.
 
Smoked pork ribs, green beans, creamed corn, potato cakes, cucumber and onion salad, radish, and I roasted the first jalepeno off this years bush lol.

Smoked a butt using Aaron Franklin's butt rub recipe ( 2pts kosher salt, 2 pts black pepper, 1 pt garlic powder, 1 pt onion pdr and 1 pt paprika ) and Smithfield's cooking technique of 30mins per pound at 350 and let rest in foil for 1hr. Turned out great.
 
Pan seared ribeye, haricot verts, hand picked backfin MD crab cakes & roasted smashed potatoes. Served with a 2015 Buena Vista Cabernet Sauvignon.

We recently moved so I haven't posted much, but figured I'd get back to it tonight. Double cut pork chops stuffed with herb (rosemary and sage) garlic butter along with rice and peas. Pork chops are finishing in the oven now.

We had a big dinner today at Garden Alley in Mullins, SC so we're going easy for supper.

Sausage hoagies, cantalope salad with proscuitto and ginger honey dressing.

Gotta use the leftovers somehow.

Halfway through, I rotated the skillet and put some cheese and breadcrumbs on the top.

Did a rack of ribs on the Weber. Setup the charcoal and vents dead on to hold 250 for 4 hours, followed by two hours at 225 in oven. Dry rubbed them while the grill was getting ready and they came out great.

Grilled up some salmon. Going to go hit the lake for some fishing if the bugs don't try and carry us off the water.

Oh my. Chicken livers wrapped in thick cut hickory smoked bacon marinating in Lea & Perrins. The other batch is in the fridge. 18 total. Be on the grill shortly.

8 racks of baby backs done on the Big Green Egg and over coals on my fire pit. They weren’t all perfect, but they got the job done. I’ll say this. That’s a lot of work without the proper set up. I did 2 dry rub versions and 4 versions with different sauces. Everything from Habanero to sweet.
 
Used up some charcoal in my fire pit to cook up a nice tri tip tonight. Tri tips are awesomeness. Put some dizzy dust Cowlick seasoning on it and it was ready. Seared it on the big grate then used one of my Green Egg grates to lift it up a little and finish it off. Perfect. May need one of those big ass coal cookers with a hoist to raise and lower the food. I dig this style of cooking.
