Picked up a new Pizza Steel a few weeks ago. It definitely holds heat better than a stone. I have been experimenting with a 550 degree bake and then about 90 seconds on broil and then back to the 550 bake. Give better browning of toppings, cheese and crust.

These are made with homemade dough, fresh mozz, pepperoni, pepperoncinis, mushrooms, black olives and fresh basil. The second one is minus pepperoncinis add fresh tomatoes.

Looks similar to my favorite........tomatoes, spinach, mozzerella and feta. Man that looks awesome!

It is really good. It has taken me a long time to get the dough just right. You have to modify commercial recipes in order to get leopard skin on the bottom and good outside crust formation. You have to cheat with a little bit of oil or fat. Bacon grease works and adds some smokiness. The other thing you have to balance out is moisture because a home oven does not get hot enough to evaporate the moisture out of the cheese, toppings and sauce.
 
Pizza, the perfect food!! Represents ALL of the food groups, meat, dairy, veggies and bread how could it get any better....
 
Can eat a frozen pie anymore but some of them have gotten much better.

Pie???? In this part of the world that means Apples or pecans. Pie indeed...you fooled me.


In the USA some Americans call it pizza pie. I don't think anywhere else in the world (except in Vietnam and China) is the Neapolitan dish a compound word. Some claim that it's called pie because it is cut in triangles or that its round shape is reminiscent of a pie chart. Others believe that the first pizzas baked in the US were simply called tomato pie. Some people credit this to Gennaro Lombardi whose restaurant claims to first to serve Pizza in America. This recently was proven to be untrue but they still make a good pie. ;)

Any way you slice it I make a pretty good homemade pizza.
