I fixed a fish stew to sale at our turkey shoot Saturday night. It was good, I was pleased, and we'll do it again next week.

It's just a small one:
15 pounds of potatoes
9 pounds of onions
6 - 28oz cans of crushed tomatoes
3 -45oz jugs of tomato juice
36oz of Texas Pete
8 cans of Jack Mackerel
about a gallon of water to rinse the tomato cans out and give it enough room to let it boil

and then 4 dozen eggs

oh, forgot, 5 pounds of bacon. How could I forget the bacon

Had our first of the season here yesterday. Went up on last Tue to the Chowan River in Edenton and caught a mess of stripers and dropped them in the pot last night. Pretty similar recipe but we made a smaller pot and added local shrimp and chunks of smoked sidemeat. Key is having a big enough pot to not break the fish up when you dole it out into bowls. I used my 20qt dutch oven for only about 2.5 gallons of stew.
 
went back to add the bacon. I cooked the bacon and broke it up as I built the pot. poured bacon grease in the bottom of the pot 1st.
 
Oyster stew is easy:

sautee onions, oysters and garlic in a pot with a stick of butter. Salt to taste.

Pour in a gallon of milk, bring to a light boil, turn off. Fill up a bowl with stew, saltine crackers, and a healthy dose of black pepper if you wish.

Ain't nothing more warming or filling on a 20 deg night than Oyster stew and crackers.
 
Hmmm ... it’s possibly going to be the coldest so far this year ... in the low 30’s to high 20’s next weekend if WeatherUnderground is correct ... bet (and hope) you sell out for the cause you guys are working for!
