Banana Cobbler. Not low carb!

COOKING SPRAY the casserole dish first

Melt 1 stick of butter in a casserole dish until melted, 375 . Do not brown butter!
Take out when melted, place cut up ripe banana slices to cover bottom - one or two layers - set aside. Don't burn yourself while doing this like I have!

In a bowl, mix 1 cup self rising flour, 1 cup sugar, 1 cup milk (you can add cinnamon, pumpkin pie spice, or nutmeg, vanilla, or bacon bits if you like, maple flavoring?) until no lumps of flour are left

Pour batter over banana. DO NOT MIX ANYTHING UP IN CASSEROLE DISH - let the butter & bananas remain on bottom.

Cook for about 30 mins or when the top is "solid/cake like" pull out and add butter and sugar on top to form a sweet crust. Stick back in for another 5 - 10 mins.
 
Easy enough that I may try it and surprise my wife, especially that she asked me to buy flour last week and I bought self rising when she wanted bread flour :)
 
Do you put meringue or Cool Whip on the top?

Another easy "over ripe" banana recipe":

Buppy Pie

Prepared or homemade 9" graham cracker pie crust

1 jar Dolce de leche
4-5 ripe bananas
juice of 1 lemon
pinch of kosher salt
1/2 pint whipping cream whipped to stiff peaks

spread dolce de leche over the crust 1/4-1/3 inches (save a little to drizzle atop finished pie)
slice bananas into glass or stainless bowl
sprinkle with lemon juice and salt
toss gently
spread bananas evenly on top of caramel
spread whipped cream (pile it high) on top. Make sure to seal to the crust
drizzle with saved caramel
Chill at least 2 hours
Drizzle reserved dolce
Slice and eat!

ETA: Yes, Naner puddin' must have meringue. And... ABSOLUTELY NO COOL WHIP, EVER!!!

These are the current ingredients in plain Cool Whip, according to Kraft’s website: water, hydrogenated vegetable oil (coconut & palm kernel oils), high fructose corn syrup, corn syrup, skim milk, contains less than 2% of light cream, sodium caseinate, natural and artificial flavor, xanthan and guar gums, polysorbate 60, sorbitan monostearate, sodium polyphosphate, beta carotene (color).

Hydrogenated oil and high-fructose corn syrup make up a majority of what you’re eating with a spoonful of Cool Whip. Not exactly a nutritious addition to your dessert.

I have totally given up trying to teach younger generations that convenienvce foods are crap. None want to pre-plan. All they want is instant gratification, even if it tastes like garbage.
