Got a Dehydrator for Christmas. Haven't made jerky in 20 years. Wish I had some venison, but I have plenty of lean beef.

Post up what you know is good. I'll try anything once. . . .
 
If I can find mine, I'll post it up. I have never tried it on beef, just venison.
 
You can use beef or venison, I've used these for both-

teriyaki jerky-1.25 lbs

1.25 pounds ground venison (2.5 pound)
1/4 cup teriyaki sauce (.5 cup)
1 tablespoon worchestershire (2 tablespoons)
3/4 teaspoon canning salt (.5 tablespoons)
3/4 teaspoon brown sugar (.5 tablespoons)
1/2 teaspoon accent (.75 teaspoons)
1/4 teaspoon pepper (.5 teaspoons)



smoky jerky- 1lb

1 pound ground venison (2 pound)
2 tablespoons soy sauce (.25 cup)
1 1/2 teaspoons worchestershire (1 tablespoons)
1/4 teaspoon accent (.5 teaspoons)
1/8 teaspoon black pepper (.25 teaspoons)
1/8 teaspoon garlic powder (.25 teaspoons)
1/8 teaspoon onion powder (.25 teaspoons)
1/8 teaspoon season salt (.25 teaspoons)
1 tablespoon brown sugar (2 tablespoons)
1 tablespoon liquid smoke (2 tablespoons)

hot 'n sweet jerky

1.25 pounds venison
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon molasses
1 tablespoon worchestershire
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons canning salt
3/4 teaspoon red pepper flakes
3/4 teaspoon black pepper
1/2 teaspoon accent
1/4 teaspoon cayenne pepper(optional)

You're welcome- the biggest key is slicing the beef/venison consistently. I've been on the hunt for some time for a meat slicer of quality.
