Well, to get this thread back on track....:)

Just me here but you'd think I was fixing for a platoon of Marines.

On the menu this evening are dry rubbed grilled wings and a small plate of veggies for me to make up for the unhealthy wings. :)

I've found the best way to get the wings oiled up to accept the dry rub is to put them in a zip lock bag and add oil, shake around...
Then I put them on foil lined trays and on to the grill...

LOL. Yea, y'all make your way up this way cause I've eaten about 6 total, 3 drummettes 3 wings a couple veggies and I'm about full!!!

Maybe I'll have a few more later this evening.
And tomorrow.

Yeah, I wanted to adopt a Great Pyrenees several years ago. These "rescue" people are not doing the dogs any favors.
 
Chicken breast stuffed with spinach & goat cheese.

Cut slits in the breast about 1/2" apart, not all the way through.
Saute spinach till wilted (1.5c) and add 4oz goat cheese (or Feta...I have that for the next time. :) ), stir till melted.
Stuff slits, top with S&P, paprika, and Mozzarella.
I didn't have Mozzarella, so I used a blend of Monterrey Jack & others.

Bake at 350F for 20-25min.
Last 5-10min, turn broiler on to brown/toast cheese...
This was pretty darn good too.

For me, 2 chicken breasts will be 4 servings...

Oh yea, and for lunch, it was a hoagie roll, toasted a little before adding rare roast beef, provolone, sautéed onions/mushrooms.
Then put back into toaster oven.
Yep, 2 good meals today. :)
Served with some home made au jus too.

Food looks outstanding. One of these days I will sniff my way there.

But, I love the place mat. where can I get one of those?
 
Spice it up a little. Chicken breast, cream cheese, cheddar cheese, chopped jalapeño pepper; then wrap in bacon and cook on grill or oven around 325* for about 40 - 45 minutes.

I'll have to give it a try next weekend maybe.

Rode the Ducati this afternoon and stopped at the Compare Foods in Clayton to pick up some burger, roma tomatoes, and shredded lettuce.
Should've seen all that stuffed into my little Camelbak.
Anyways, made some burgers this evening - too many really, but I hate to fire up the grill for just one or two items.
Maybe I need a small gas grill. /shrug/

So, I made 3 burgers, oblong in size to fit the hoagie rolls I had remaining.
2 burgers stuffed with chopped baby bella mushrooms & swiss cheese.
1 burger stuffed with Feta cheese.
1 burger stuffed with a little pimiento cheese & sliced fresh jalapeño peppers (not enough peppers).

Those are some fine looking burgers, Wolfie.
 
Burgers are always good... especially when you make different varieties. Looks tasty wolfpack65!
 
Chopped baby bells mushrooms work surprisingly well in burgers. They seem to help keep them from drying out and help hold them together.

Next time you make the burgers with baby bella mushrooms, add some crumbled smoked Gouda cheese in there too. Oh my, it's good! I also like to use chopped sirloin for the burgers... the smoked Gouda cheese keeps it moist as long as you don't over cook them.
 
Thanks for the suggestion, I'll give that a try, now that I think about it, we haven't had burgers in a long time.
 
wolfpack65 Your cooking posts have inspired me yet again. I made a variation of your chicken with spinach and feta last night. I cut the chicken horizontally and put wilted spinach (cooked in butter) with some Monterey Jack cheese in it and seasoned it with salt, pepper, and paprika. I then lightly fried the chicken to brown and then put it in the oven. I made some fresh mushrooms (in olive oil this time) and added tamari sauce, red wine, and garlic and put it on the chicken to finish baking with a little bit of mushroom juice to help keep it from drying out. It was a real winner. Served it with fresh broccoli (lightly steamed).
 
Well, Tuesday I made a seriously good Valentine's meal. Filet Mignon with baked sweet potato, French bread, and a Caesar salad. That's grape juice in the glass since we don't drink.

Then tonight I fried boneless/skinless pork chops, cooked some rice w/ chili powder and cumin, and some green beans. And in the middle of it all impulsively decided to try making hush puppies for the first time since I already had the buttermilk and corn meal out. They didn't turn out bad at all.

I'm gonna get up shortly and go make some chicken alfredo with broccoli & baby bella mushrooms.
Not sure what else I'll have with it...that's a hearty meal in of itself.
Especially since I like to add the broccoli to it vs eating separately.

Thinking about a grilled pork tenderloin over the weekend and maybe some beef & broccoli with soba noodles...
 
Tonight is meatloaf, noodles tossed with some sauteed mushrooms and broccoli with 3 cheese sauce.

Sunday is roasted oysters (appetizer) and coq au vin or beouf bourguignon (chicken and beef in freezer, I'll decide tomorrow) over the leftover noodles. Salad and sourdough too.

Tomorrow is grilled meatloaf sandwiches. I'll be in class all day. No time to cook.
 
wolfpack65 and Miss Lily you two must have been reading my mind. For some reason I've been thinking of making Italian meatballs, which is kind of a cross between the alfredo and meatloaf. I usually put some bread crumbs, onion, egg, cheese, and seasoning in them and if I have it fresh grated zucchini works really well.
 
Yup, meatball/meatloaf recipe is same, just prepared in different shapes.
 
Fixed some chicken alfredo with plenty of mushrooms & broccoli.
Yea, I know most probably don't add those things to their chicken pasta alfredo, but it's just me and I fix as I want. :)

The wife found ground beef on sale and bought a large package. I've been wanting a good burger. Looks like it's gonna happen this weekend.
 
World's best burger is Moroccan spiced lamb burger with Havarti and red onion on toasted onion roll.

Reminds me, this needs to go back into rotation for Spring meals.
 
OK. I wasn't feeling great upon waking this morning and didn't really get going till after lunch.
I just couldn't let the day go by without doing "something", so

Went to Lowes and bought 8 bags of mulch.
I had cut my roses back earlier this year, but cut them a little more this afternoon, cutting anything that didn't have something "new" growing from it.
I also whacked the "ornamental" grass, re-set the white border edging.
Then put out 5.5 bags of mulch for the roses and the little area in front of the sidewalk.

Maybe I'll post a pic or 2 of what I did this afternoon in a "Whatchya Doing" kinda thread...

After all that, I really didn't feel like cooking, but /shrug/ gotta be done.
Didn't figure some nice looking available guy would show up to cook for me, so just looking out after Number One.. :)

So I've got a pork tenderloin with my own dry rub.
NY Strip steak, cut in 2, as it's just too much for me at one meal, to eat all of it.
I'll maybe have the other half with breakfast in the morning.

Baby Bella mushrooms stuffed with a mixture of the chopped stems, cream cheese, bacon (bacon grease! :) ), jalapeño, garlic.
Stuff them and bake at 350 for 20-25min.

Was gonna fix something else to go with, a green veggie, but just too tired.

I guess the steak looks pretty rare, but if you compare to the one before the grill, it's perfect, except my grill wasn't
quite hot enough to sear each side.
Very tender and tasty. :)

Well, it's beef & broccoli with Jasmine rice (cooked in 1/2 water & 1/2 beef broth).

I typically don't eat supper unless it's early and I've fixed a steak or something like that...
Comes from being single, eating like a King/Prince/Pauper during the day, and just habit now after 9yr...

Therefore, I didn't plate this meal, but just put it in my containers for later this weekend & next week...
Probably doesn't look all that good, but trust me...not much I fix isn't good. :)

Getting a little grilling on this evening since it's so nice out.

Had some thick cut pork chops, butterflied those & seasoned with S/P and my dry rub.

Sliced up some small taters, a head of broccoli, and about half of a large pack of Baby Bella Mushrooms.

This will finish out any kind of breakfast/lunch meals for me through Friday most likely.

Also threw together a mix of black beans, Rotelle, sautéed onion, and the remainder of the grilled squash & zucchini sliced up.
