Fish...help a brother out

So as I wandered around Lowe’s today I found one pf the holy grails. Wild caught perch. Never imagined finding it here. I usually have it at the Riverfront on Oneida Lake when I go north for fishing trips.

So I have about 1.5 lbs of perch filets. The are sweet, tender little filets befitting the mighty perch. I have some buttermilk and some House of Autry Fish Fry seasoning. I also have this new fancy ass Fridgedaire Air Fryer oven.

Anyone have a plan on how I should handle these? I’m not much of a frying expert.
 
Did you check country of origin? A lot of the wild caught fish we used to get when I worked meat dept at Lowes was Chinese
 
Some of this in a bag.
Wet fish.
Throw in bag.
Shake.
Drop in a pan with a little hot oil.
2.5 min., flip, 2.5 min. more, done. (depending on thickness of fish)

You’re just jealous you don’t have perch here. You’ve had to live on crappy catfish all these years.

@CZfool68 how did you like the air fry compared to regular pan or deep frying? I've got an air fryer and been debating trying it with some sheepshead for fish tacos.

It was good. Not as greasy or crisp, but good. I also never fry fish so there is probably a better technique than what I used.

Yep,, its called a beer batter and frying in oil. Either pan fry or a deep fryer Just did some cod filets last weekend in the deep fryer, with a beer batter.. used the same batter on some thick cut onion slices and some shrimp. That was good eating. Wife bought an air fryer back a while ago,, was to small for the crew here, so she bought a larger one.. We are not impressed, there is a real good reason why restaurants all all sorts use oil for fried foods, it just works better.

Yeah, except that I prefer not to have another heart surgery if possible. So there’s that.
 
Eating healthier is one of my goals. I turned 50 this year. After my physical and all the fun exams the doctor gave me, like a colonoscopy, cholesterol, and EKG. He decided to start a low dose of high blood pressure medication, watch my fat intake, and exercise more. Don't get me wrong, I'm not in horrible shape, but I hate taking drugs, and if I can change my lifestyle, so they aren't necessary, then I want to make those changes. I will say the air fryer has been fantastic for eating healthier. It does cut down on the grease and fats. One of my favorite dishes now is taking chicken breasts in small strips, dust them with a dry rub, putting them in the air fryer, and then cutting them up and putting on a salad. Even have my 22-year-old son addicted to it.
 
I need to do a video on fried fish...and fried food. Properly fried food is not greasy.

Tailhunter, I'll have to try that Andy's breader. I'm a fan of House Autry but willing to try something else.

True. But it is still higher in calories and bad stuff.

It just tastes really freaking good.
