Fried cabbage and sausage

A friend of mine up at Nantahala turned me on to fried cabbage. 'Course Jimmy fries his on a blacked steel plate over an open fire. Never the less....

I started adding some kind of ground meat for protein. Today it's a pound of Jimmy Dean Hot and Jimmy Dean Sage sausage.

Brown and crumble sausage in a cast iron skillet. I did a half pound of each at a time and then put it in a bowl while I fried the cabbage.

I fry the cabbage in bacon drippin's. I used what's gone out of the container for a full head of cabbage.

Chop up the cabbage and fry.

When the cabbage is almost done, add the sausage.

Stir well and cook long enough for the sausage to warm back up.

My wife makes a similar dish, except it's totally different. :p

Cut up the cabbage and place it in a 9x13 casserole dish. Drizzle bacon grease over it. Lay several strips of raw bacon on top. Cut up a whole (or half if you want) smoked sausage. My wife uses Hillshire. Salt and pepper. Cover with foil and bake.

I'll have to get the temps and times from her once she's back home, but I know part way through, it gets uncovered to brown the bacon a bit.
 
I like that with smoked sausage or bacon. I also go without the meat and add a few dashes of Sriracha.

I also add some slivers of thinly sliced poblano pepper and red bell pepper for color.

That's one of our favorite things to make, if you want to go next level, throw some blue cheese in it
 
@Don. Just how big is the container, that the bacon drippings were in? It looks like you used a BUNCH of it.
 
We are back to cooking cabbage since we have some decent cast iron to fry it in. Just didn't taste right in stainless so we quit for a long time. Had it a couple times in the last month. Bacon grease and all. Made slaw out of half and cooked the rest the last time. Forgot how good it was.
 
One of my favorite meals. Fried cabbage can make you windy so make sure to have a comfortable couch.
