Ham/Egg Cups... A How-To...

So I and some of you are doing Keto/low carb. Quick food on the go can be a challenge. Here's an easy to make/make ahead option for you... Feel free to mix it up however you like!

Preheat your oven to 400°. Take out a nonstick muffin pan. Get yourself some thin slices of ham or whatnot. I used pancetta for this batch...

Line the muffin pan gently with the meat...

Next drop in a few flavorings... I put some minced onion and mushroom in this batch, plus garlic, cayenne pepper, salt, pepper, and parsley...

Then crack an egg in each cup carefully and top with any other seasonings you'd like(I like paprika)...

Heat for about 12-14mins depending on your pan and oven, and how well done you want your eggs. I like the yolk to be soft boiled consistency. Pop them out gently with a silicone spatula, hit 'em with some fresh herb of your liking, and eat them.

Make them in advance, let them cool a bit and they hold up well in the fridge for 5+days. 30secs in the microwave and you're good to go... Taste good cold too... 3 of these is a portion and a surprisingly filling meal. We were supposed to eat 6 on a "gorge" day and I couldn't do it. I was finished halfway through the 5th one...
 
I like it, if you scramble the eggs you could call it a meat-crust quiche.
 
Would this work with just egg whites? I don't eat the yolks

I'm sure you could make little quiches like this too. Just be sure any "wet" veggies are slightly dehydrated before making it. Spinach, fresh shrooms, etc, give off a lot of water when cooking. Could get mushy...

Sure. No reason it wouldn't. Might adjust the cooking time. I don't know. I like the different textures and almost sauce like aspect of the yoke myself.

Weve done it this way before.... use a silicone muffin cup. I cook whatever ingredients are going in in the filling, add it together with some eggs whipped in blender, top with some cheese, can make them thick and its a good breakfast on the go, if you make them thin you can use them as a " English muffin, with sausage patties and cheese in the middle, a true egg McMuffin.
