IMG_8526.JPG While this isn't my first venture into homemade candy, it is my first time at strawberry cheesecake fudge. I think it turned out good! My daughter went crazy over it. I had made birthday cake fudge last week for my daughter to take to church. It is therapeutic for me and does good with my sweet tooth.

Could you bring some back to Apex?

That's a long drive. My guess is it won't make it. But we have an old family recipe for peanut butter fudge that mos people think is awesome. Maybe I can convince the wife and kids to make up a batch soon. It is usally only prodcued from Thanksgiving to Christmas since that is the period when my wife and kids lose their minds.
 
1 & 3/4 cups of granulated sugar, 3/4 cup of heavy cream, 3/4 cup of unsalted butter, a pinch of salt 11oz bag of white chocolate morsels, 2-3 oz of strawberry morsels and 2-3 oz of white cheesecake morsels (get at most craft stores), 7ozof marshmallow cream, 1 tbsp of strawberry jell-o mix.

Heat the cream, butter salt and sugar in a pot until it begins to boil, reduce heat and allow to slowly boil for about 5 minutes. Remove from heat and stir in marshmallow puff, and ONLY white chocolate morsels. After throughly mixed pour half into your pan (with parchment paper). Add strawberry and cheesecake morsels and jell-o mix to the other half and mix . Pour on top of the first layer and use a toothpick to swirl. Let cool and enjoy!

That looks delicious. My grandma makes stuff we call peanut butter candy, it's like a fudge but sets up firmer. That stuff is so good I would travel the 6 hours to her house just for a bowl full.

Do you cook to about 235, softball stage, like most fudge, or does the jello negate the need to go that high?

No cooking necessary, once the sugar/cream boils for five minutes it will set up as it cools. Just refrigerate after you are done and it turns out rather good if I do say so myself. Honestly, the jello is forcoloring and flavor. You can substitute food coloring and strawberry candy flavoring .

Looks like an interesting recipe, I'd like to try it. So, about the strawberry morsels and cheesecake morsels, I can't find any references to them. Can you show me an example, so that I can get some?
