Those are nice. Dexter makes good stuff.

You'll never use them unless you invent a reason.... experience...
I'm betting he finds a reason to put them to use. I mean, a man with 2 cleavers just has to chop something.

Yes you are :p
If you want to get rid of the smaller one, let me know. I used to have a great Japanese carbon cleaver that was great for preppin garlic, veggies etc.

Nice dexters. I own several dexter fillet knives and like them a lot.

Funny story on a cleaver. My buddy dug out of an old pack house on his property, his father-in-laws cleaver from when they raised and butchered hogs 50+ years ago. He asked me to clean it up some, leave the patina on it and give it a good edge. I took my time and got looking good with a good edge and brought it back. The next time I went over to his house he showed me his front porch which had a bunch of parallel marks in the concrete porch. He asked me "got any idea what did this" I responded "I sure hope it wasn't that cleaver", but sure enough it was. His wife had been startled by a small snake on the porch and she grabbed the cleaver and hacked it to hell and back. Looked like a serrated blade cleaver. We decided to just hang it up in the kitchen on the way as is as a conversation piece with all the gouges.

Keeping the 7” and taking the 8” to the mountains. Gonna butterfly some chickens and turkeys. Also can get some large hunks of beef from the butcher shop in West Jeff. Gotta love Rose. And her pork ain’t bad either.
