and I cannot lie. I got these 2 put on the UDS at 6:00 this morning, about 17.5 lbs. Got my Maverick thermometer set out and found out that the meat probe is not working correctly. Reading 243 at room temperature. Oh well, I'll have to wing it and use a manual meat thermometer.

I've got 2 in the freezer that need a smoking.... Maybe after the turkey sammiches are gone.

I didn't get the after pics, sorry. Smoked them for 6 hours, wrapped them in foil and cooked for 4 more hours. Pulled them off and let them rest in the cooler for 3 hours. My son was in a hurry to get them chopped so I didn't get pics.

I'll do better with the pics next time, probably at Christmas.
