I love okra season and have not found any way that it was cooked that I didn't like. I've been having it at least twice per week since it came into season. Cooked down in a cast iron skillet seasoned with southern style fatback is always a winner at the Brangus house.
 
Picked some up at the vegetable stand around the corner and just roasted them in the toaster oven with some sea salt. Yum.

If we get enough I'll pickle some too. Good stuff.

Wish I hadn't lost the boiled okra recipe from a lady I used to work with. It was amazing.

We have been picking okra faster than we can eat it. The only way I like it is baked in the oven.
 
My wife does it but I think this is right. She uses small whole okra and bakes at 400-425 for 20 min or so but keeps a check on it. She puts the okra on a baking sheet and dollops butter on it and sprinkle garlic salt before she bakes it. It gets crispy on the outside but stays tender inside without getting slimy. She does fresh snaps and asparagus the same way.

We've prepared it that way quite a bit.........love it roasted in an oven.

Wash the okra well.......slice it into 1/2" circles and place them on a large cookie sheet greased with Crisco or some other vegetable oil....sprinkle with salt and keep the oven around 450 degrees until browned. This cooking method really brings out the roasted taste in okra and the finished texture is great too.

Awesome dish I tell ya.

We just roast ours whole, although I think I need to try your way, too.

I'm sure that roasting them whole is just as good.........I'll try that method also.
 
I was at a buddy's house last season who was given two foodlion bags of okra. Most were pretty big. In an experiment I decided to pickle them what the heck these guys were tough. The okra were a good 5-6" long, but they packed nicely into a quart jar (tops down first then points down to fill the jar), most ended right before the curve in the jar. I packed them tight (8 quarts total). I then added the hot liquid, processed, and we let them go for 6 months. They came out pretty good and not tough or slimy at all. This year I grew some and we've pickled about 8 pints of small finger length okra.

I'll have to try the baked method. I do love some fried slices. I cook some up as a snack when cooking fish for friends.
 
I got the grandkids hooked on pickled okra. lol

I like okra fixed anyway it can be fixed. Fried, boiled (mixed in with field peas), roasted, grilled, pickled....

I remember when I was little I was not too fond of picking okra.... it would make me itch. lol
 
At the local fish camp we eat at, they offer fried okra as a side. I have been getting it a lot.

They had the best fried okra ever at the hospital cafeteria two days ago. Who'da thunk it?

Very awesome stuff made by a very awesome lady who takes really good care of a really awesome family.

And they all make you feel like family while you're there. Time spent there is well spent.

So true! Good people no doubt.
 
How big do okra plants get? We have some that look like trees.

Some varieties get pretty tall. Mine are close to 5' right now. The more they produce the taller they get. If you quit picking and let them go to seed they usually stop growing.
