Jalapeño Pickled eggs

when I make a quart I use half a small jar of the pickled jalapenos and juice, add 1 tbsp. kosher salt and 1 tbsp. sugar cover the eggs with white vinegar then refrigerate for a week.
you can also substitute fresh jalapenos for pickled I like them both ways.

I also use a pickling spice and add whole small canned beets. I like the color, it doesn't add much to the flavor, and the beets are pretty good too.

One thing for sure, you either love them or hate them, there's never seems to be any grey area.

I've also used Texas Pete pepper sauce in place of jalapeños.
 
I have never been able to get them pickled all the way through like the commercial offerings. I did get some really good jalapeno picked quail eggs from Backwater Guns the other day.

Let em set longer. I've had them pickle all the way thru the yolk.
 
I had boiled eggs and jalapeños for breakfast, does that count?
It's the aging in vinegar that gives the after effects their exquisite nature :p

Never tried a pickled eggs, but this post inspired me to give it a whirl. Let ya know in a week or so I guess.
Same here. Might give this a try this weekend. On a side note, a pressure cooker or instant pot makes eggs that are SUPER easy to peel.
 
If you want really creamy tasting eggs for pickling, or anything else and none of the sulfur taste of a boiled egg, just bake them. They're great tasting and baking them like this lets the gasses cook out of the shell instead of being trapped in by boiling them. You'll actually see little brown spots on the eggs where the gas cooks out. Put them in a muffin pan and bake in the oven preheated at 325f, when they're done put them into a bowl of ice water for about 10 minutes and they shell really easily. Cook times are below for different levels of hardness.
OVEN TIME RESULT
20 minutes Very runny soft boiled eggs
22 minutes Runny soft boiled eggs
24 minutes Very gooey medium boiled eggs
25 minutes Gooey medium boiled eggs
26 minutes Just set medium boiled eggs
27 minutes Medium-hard boiled eggs
28 minutes Very creamy hard boiled eggs
29 minutes Creamy hard boiled eggs
30 minutes Firm hard boiled eggs

My recipe is very simple it's a refrigerator recipe so eat within a couple weeks of making, cook the eggs (I do a dozen in a large jar), take a dozen or so smaller jalapenos, split them in half from the bottom scoop our the seeds and sit aside, leave the halves attached and the stem on. Put the eggs and peppers in the jar a few at a time and smash the peppers against the side of the jar a bit to get some juice out of the pepper. Once everything is in add in a apple cider vinegar a cup at a time till everything is covered over by about an inch of liquid, add in one teaspoon of salt for every cup of vinegar that you used. Put them in the fridge to soak with a lid on the jar. Leave the seeds laying on a piece of paper overnight to dry out some and the next day crack the seeds with a spoon and add them to the jar. Let them soak for about a week, once a day use a long handled spoon and mix everything around taking the ones from the bottom up to the top and getting the peppers and seeds mixed around.
They'll be spicy, but not super hot.
 
I just use the the rest of the juice from a jar of Dill pickles.. Boil up some eggs, shell then then dump them in the store bought pickle juice and write the date on them. Set them in the way back of the fridge for a bout a month maybe more..I can see adding some chopped peppers to kick it up a bit but not just my taste..

My eldest son is the only one of the bunch who will eat a pickled egg. For him, cider vinegar, crushed garlic, mustard seed and fresh dill. I make a quart jar for him for his b'day each year.

If anyone needs deviled egg ideas, I am the queen. My egg platters are epic and requested for most gatherings.
 
My wife found a recipe for balsamic pickled eggs. She made the first batch today and they are in the fridge just waiting to be eaten.

Old pickle jar
13 eggs
Can of sliced jalapeños and the juice
Salt
Pepper
Sugar
A whole lot of crystal hot sauce.
Fill with apple cider vinegar

Walk away for 3 weeks.
