Here’s all you need. A jar of bolognese, some chimichurri seasoning, garlic salt, 1 bell pepper, 1 sweet onion, some butter and 6 sausages of whatever floats your boat.
I prefer a hotter sausage but we got these mild ones from Giacuomo’s in Greensboro and I have to use mild with a 10 year old and a wife.
So put the butter in an iron skillet and let it melt.
Add the sausage and get nice and brown. Don’t try to get them done that’ll just make them black.
While those are cooking, slice the onion and pepper into long pieces and set aside.
This is about what you’re looking for on the sausages You want them done enough to stay solid when you cut them up. Move them to the cutting board and slice while you cook the onion and pepper.
Throw the peppers into all that good butter and sausage juice. Season the vegetables liberally with garlic salt and chimichurri.
While those are cocking slice the sausage with a sharp knife. Notice the pink in the middle. That’s fine as they’ll finish cooking in a minute.
The pepper is getting soft and the onion is starting to carmelize. Time to add the bolognese.
Once the bolognese is stirred in add the sausages and fold it in to the mix. You’ll only need to cook this for 3-5 minutes on medium heat.
Served with some garlic Texas toast and aged, shaved Parmesan. Everyone eats seconds.
