Keto Meals... My 30-day cleanse...

So I just started a 30-day keto cleanse with the ol' lady. Need to get my system cleaned out and drop some #s... Day 4 and it's not too bad. We eat 2 meals a day, Break-fast at 10:30 and a two course dinner around 5pm(or as early as we can manage working like normal folks). The portions aren't huge but they are filling. The food is really good... Like, really good... So I figured I'd start a thread...

This morning for "Break-Fast"

"Ramen" bowl with zucchini noodles, Pork belly, soft boiled egg, and a really nicely developed broth...

For dinner it was Umami burgers topped with panchetta and mushrooms with lemmon pepper wings... There is a keto bun for it, but I didn't feel like making it and don't mind a fork&knife burger... FWIW, I could eat about 50 of those wings. Man they're tasty...

Are you cooking everything or are the ingredients pre packaged? The pics look awesome!

Everything is from scratch. Just finished roasting some marrow bones for breakfast tomorrow... Also making some bone broth over the next couple days...


EDIT: I didn't make the pickles for the burger. Those a Tony Packo's from Toledo, Ohio...

Eddie knows I know food, he's just never had a chance to eat my cooking.

Nope, I made them from skin off chicken thighs pan fried in coconut oil/chicken fat...

No I know he cooks but those meals look like they require more time than I have. I must say the ingredients are hitting all the right flavor notes for my palate.

You would dig these recipes. It's VERY time intensive, I admit. I don't get this involved for every meal normally, but the cleanse is specific and I vowed to follow it for a month as closely as possible. It's also a lot of hard to find and pricey ingredients. I'll make some simplifications and minor tweaks after the 30 days as I can't spend this kind of time on food alone(at least not until I retire).

I'll keep you posted. I love this food. It's the 1300-1400 calorie a day portions that are killing me right now. I need it to be quicker and less involved, but still pretty clean and high-keto. I'll be looking into some quality store bought options for some things. Once the 30 day is over and I have a better idea of what I want more often, I'll do big batches and use the vacuum sealer. Most of what we've made so far will hold well for reheating if broken down and packaged properly.

Fresh Dill is not rubbish! It's a great way to brighten up a really rich or fatty dish. Now that dried out cardboard tasting stuff a lot of folks use? I agree... Fresh herbs are the only way to roll...

Fresh any thing is good, but someday I am going to open a restaurant with no stinking garnish. Saw a place sprinkle scallions on wings a while back. WTF is that?

As an onion aficionado, I like scallions, chives, green onions, whathaveyou, on just about anything. As long as they stick to the wing, I'm game. If you throw them on dry wings or something just for looks it's stupid, but developing a dish is all about layering flavors. Garnish has its place. A little cilantro or dill, or green onion, or basil often finishes off a dish perfectly with that last little blast of flavor.

Too much, lol... It's been a process thus far. A couple hours a day. I was telling @NKD earlier, "I'm living my diet right now." Hopefully it will be worth it at the end of the month. Honestly the food is worth it too. Been great eating, diet aside.

Day 8. No pic for break-fast. Had fried eggs and a pork chop. Always tasty...

Dinner was another one of the "best yet" variety...

Roast Chicken Chile Relleno and Mexican Meatballs with Avacado-Jalepeno sauce and a little Black Olive Salad... Spectacular...

Damn @bigfelipe , you dah man. Better not let my wife hang around you much. Cooking is the only reason she keeps me around. You are obviously are clear and present danger. Nice work.

That's been my experience as well, especially now that I have kids. Trying to eat clean and healthy, staying with fresh goods and eliminating processed foods requires A LOT of time and effort. I think it's worth it but to me it just shows one more way that our society is so caught up in working, going, doing, being all things to all people that no one takes time to properly feed themselves or take care of themselves.
It has become a major goal in my life to just slow down and as odd as it sounds, food is one of the reasons.

Eating clean and well doesn't have to be a chore. This cleanse is time consuming because I don't know the recipes and many of the ingredients. I've done clean and low carb before, but not keto. Once I finish the cleanse and move to continuing the lifestyle, I'll simplify the dishes some and streamline the cooking process to fit my life better...
 
Day 9...

Break- fast was a Hot Mushroom Salad with Bacon. Kinda weird... 1st dish I wasn't impressed with. Tasted fine. Not really anything I'd bother with again.

Dinner however...

A little surf and turf action... Beef Brisket Ropa Vieja with salsa and olives, and a Crab Salad... That was pretty great. The Ropa is going to be dinner 3 times this week with various accomplices. I'm down with that...

It's called 30-day Keto Cleanse. The writer is a hippy-dippy hardcore, but the plan is solid and the food is pretty amazing. There's a bunch of recipes and the plan, plus a bunch of other info.
 
Day 10...

Break-fast...

Ribeye and Fried Eggs with Hollandaise. Not pretty because I ate on the job, but come on... steak and eggs...
