Keto Meals

I'm not necessarily on a strict keto diet but my wife is so I eat lots of low carb meals when she cooks. One of my absolute favorites is fat head pizza. I believe the crust is made of cheese and almond flour and it is fantastic.

Omelets are fast and easy. I just got back from the gym and made myself a 2 whole egg, 6 egg white omelet with beef, tomatoes and cheese.
 
Getting ready to give it a shot. Just have to go over this stuff with my wife, who is interested. Got to figure out how to adjust our grocery shopping and such.

FYI, looking into it Kale figures pretty heavy into some of the dishes. It's stupid easy to grow. So if you have enough space for a container you could have your own kale up and producing in a month or less. As long as you don't pick all the leaves off one plant, it keeps producing. Mine are going gang busters with the warm temps and rain. Been eating it for at least 2 weeks. Kale salad for lunch!
 
When I try to lower my carb intake I like to do shish-ka-bobs on the grill a lot. Pick your meat and marinate it for a day. Any Italian dressing or favorite marinade will work. I buy some peppers, zucchini and mushrooms to add as well. Any veggies are fine. Cook up a bunch of it. Leftovers are fine cold or microwaved in a minute or so. I have also found leftover ka-bobs to be an excellent boat food when thrown in a cooler. Good finger food.
 
Breakfast casserole: 14 eggs scrambled together with chili powder, garlic salt, and pepper, set to side. In skillet brown one pack of BassFarm sausage with one whole onion and one whole green pepper, drain and pour into bottom of 9x13 pan then pour eggs on top and bake a 375 for 30 min. It's delicious and easy for breakfast. We slice it into 10 equal pieces and just warm a couple of slices each morning.
 
Kale salad. Fresh from the back yard. Turkey, cheese, carrots, broccoli, olive oil, and Greek seasoning.

Figured out that olive oil and greek seasoning is pretty much the trick for any vegetable. Even though carrots are on the higher side of carbs, they sure are tasty this way. My wife is now scouring pinterest for recipes that are low/no carb.
 
So, just finished Easter lunch and had to share. We usually do a potato with lunch but wanted something lower in carbs this time. So we baked a butternut squash. Wow was this good!

One squash. Half stick of butter. Garlic and parsley. Hard to tell the difference. Same texture but sweeter.

Pork and Beef Meatballs in Red Sauce over Pesto "Risotto" with Grilled Asparagus. The pasta is Miracle Noodle's rice. It's a soft texture like well cooked pasta. Tasted great.

Fathead dough has been a game-changer for us. Colleen made sausage biscuits this weekend with it that were out of this world good. We use it for pizza obviously, pig in a blanket, savory muffins of all sorts, pretty much anything you can imagine. Makes cheese/garlic sticks, chips, tortillas. It can be modified slightly to make buns, bagels, and rolls too. I even have recipes for pierogies, chinese dumplings, and ravioli with it...
