Lengua (cow tongue) Tacos?

There's a Mexican food truck near my house and they sell the best dang lengua tacos I've ever tried! So I've been wanting to try my hand at making them.

I'm just curious if any of the cooks on here has made/cooked cow tongue before? Is it as easy as the recipes online say, was there anything you didn't know or learned the hard way first time you cooked it? How easy is it to peel the skin off? Can you overcook/prep it? I'm planning 9n putting it in slow cooker for 4 to 8 hrs or until tender with vegetables and spices.

Also do you guys have any good salsa recipes? A local restaurant (papas and beer) sales salsa tomatillo roja that's got the perfect level of "I'll regret this later" heat. And I also like Avacodo salsa any good recipes for that?

now I need to find a place to buy a whole tongue to experiment myself

Just got out of Ingles near me, meat market manager said he keeps cow tongue in the back frozen. Orders it on regular basis but not enough to thaw and sell. I asked about cheek meat and he said he would have to ask his suppliers if he can get some, didn't recall ordering any of that. Hope this helps.
 
For those in Raleigh the lengua tacos at Taqueria El Toro on Junction Blvd which is off of the Tryon Rd just West of the South Saunders intersection are pretty good in my opinion. For any of you that have been there previously they moved across the street to the old bank building in 2023.

The grocery is still there and would likely sell beef tongue. I've seen it sporadically at the Sam's Club off Capitol as well as the Zebulon Walmart. There is also a Latino grocer in Zebulon

First time I went to Taqueria El Toro was probably 8 or 9 years ago. I was staying over off 70 at the Hampton Inn. Coworker and I were looking for some Mexican and it popped up on Google. I don't remember what we got but it was food for 2 guys and 4 beers and I think the total was $15 or $16. It was awesome!. They also had to get a workers kid come take our order. I haven't been over there in a few years, need to stop by again next trip up there.

Your folk have earned a reputation, though admittedly it’s highly undeserved. Some of the best meals I’ve had have been at a pub in your homeland.
Actually I was making a horrific Frankenstein hybrid Italian American thing using meatballs, cheeses, spaghetti sauce and canned biscuits.
 
Sounds good minus burnt cheese, you ever perfect it?
Other than cheese that ended up burnt to the pan it was pretty good. Sort of like meatballs with dumplings but in spaghetti sauce. I think I'd partially or fully prebake the biscuits first next time.

Hmmm, food for thought. (Pun intended) I wouldn't have thought to partially cook Biscuits beforehand. That's why I was asking about cow tongue. If anyone made it before and seen small mistakes they would've improved on. Ingles does sell/order tongues. Just got to find good salsa recipes now.....

You mentioned meatballs, thought of this at end last paragraph, I use to work with a guy that made "Swedish meetballs" in sweet/pretty hot sauce years ago. I'd kill for his recipe. He always made 3qt crock pot for pot luck. You better had been first 1/3 of people in line to try it. Because they always left quick. He WOULD NOT give up recipe. Lol

I think I have only ever encountered one dish of meatballs I wouldn't eat.

Same here, hell I'd even try rocky mountain meatballs. Never had the chance so far, but in all my life I've never tasted a better meatball. Must've all been from scratch or something, family recipe. Definitely wasn't frozen ingles meatballs.

Go to casa Miguel’s and buy his salsa. He’ll put it in a to go cup. You pick the size.

Best damn salsa I have ever had. It’s hella hot but so much flavor that my 13 year old son and wife who don’t like hot food will eat it.

That's the type of salsa I want to make! But I'm white as vampire (3rd), conspiracy theorist like Dale gribble (KotH), as country as boomhauer. When I go to to my local taco stand I just cross my fingers for what I get. Like my old plant manager said "I don't understand your dialect" while expressing my thoughts in all employee meeting. My buddy (from basque) spit his coffee out in meeting laughing. We (buddy) had serious "dialect" issues training. Laugh everytime I remember him doing that, he was the one I couldn't understand. The look on people's faces watching us talk together, every one else trying to decypher Lol.....

Anyway back to the salsa!!! Where is Miguel's house? Is it within 1.5 hours of waynesville, nc? If so send me address, will try to go there this summer.

I went Friday night, the tacos were good and the sopes were excellent.
That salsa is probably as good as I’ve ever had. Definitely worth it for me!

I buy some to take home just about every time I’m there.

Had some for the night before the big BBQ dinner last year.

@Alabamacoastie hates spicy food and even he was like dang, that’s the hottest thing I’ve ever enjoyed.
