Some folks call it slappin Collards. When prepping for cookin hold Collards by the stem & whoppem on the counter. This allows you to run your fanger down the stem & remove it so's your Collards are more tenderer. You'll like em better without the tuff stalks. Cheese?
 
Welcome! I know Mark and Jen personally and they are great folks! Mark did a beautiful job restoring my S&W 642 that I had carried in a ankle holster for 5 years . He did a nice cerakote finish on it and it looks super again! I will post pic when I get a chance.
