Plant based Steak with tofu. Finish it off with a rice cake sprinkled with cinnamon as a dessert. Any name brand carbonated water will satisfy his thrust.

King crab goes well with a ribeye. Or it stands on it's own as well.
 
I vote for a grilled Wagyu, bake potato and some asparagus baked in bacon grease.

And, a nice Pinot Noir or a beer. Lol.

A one pound tuna steak seared about 30 seconds on each side, grilled zucchini with decent char, steamed and seasoned broccoli/cauliflower with cheese, and 9 layer chocolate cake for dessert...

Let someone else handle the cooking, take him out to Midwoods smokehouse, brisket, jalepeno creamed corn and baked beans. They have a decent selection of drinks so you're sure to find something he likes. Find a cook out on the way home for a milkshake and cuddle up for awhile after you get home. Simple, relaxing for the both of you. Most guys are simple, feed us, fxxx us, help us forget about the day and we'll think you're the most amazing woman ever.

It honestly depends on what you intend for the rest of the evening.

If you intend for the evening to include sex then stay away from Carbs and starches. Those make a person feel full and sluggish.

If not then steak and sweet potato (butter only) with my favorite beer or bourbon. Would be awesome.

If yes then substitute the potato with a salad or cauliflower rice.
 
Update on the birthday supper. Thank you for all the input. @Bows & Bullets went with a large marbled ribeye and all the fixings! I defiantly do not deserve her! Afterward, she gave me several presents. A set of 45 degrees offset backup sights, some smoke translucent Lancer magazines, and multiple packs of lures for red drum and trout. More than I deserve and certainly happy to receive. Yet that was not all. This woman went out and got me 3 bottles of very nice bourbon! These bourbons are extremely difficult to find. I later found out that she had one of our very own forum members recommended and helped her obtain said bourbon. Bows & Bullets is one of a kind, and I cannot stress enough how much she means to me! I also cannot stress how much this forum and all its members mean to me. Thank you, everyone, for helping me have a wonderful and special birthday!!!
 
I haven't read through this post, but we just had my wife's 48th birthday. My parents offered to go out to dinner. Sure said she'd rather have us make some filet mignon at home, which we did. Filet cooked perfectly on cast iron with butter. Allowed to warm to room temperature and seasoned. Let sit 45 minutes. Had with some cheesey potatoes. Quite good. Had left over steak for breakfast with some fried potatoes and eggs from our backyard chickens.

All in all, I think I prefer perfectly cooked steaks at home over going out to eat. Especially at today's prices of $25 pretty pound.

Alright men, my better half has a birthday coming up this weekend and I wanted to make him a dinner, it won’t be a surprise if he sees this but that’s ok. I’m dieting so we aren’t eating dinners together anymore but I want to do something special for him. He’s an amazing man and deserves the best everyday, I already have something in mind but I’m curious what some of y’all would like to have? So give me some suggestions and ideas. And if you have a bourbon suggestion to go with it, throw that in too. Thank you in advance!

To be honest I just want them all under one roof for a day so I can smoke thier favorites. They make my day, not a meal or gifts. Each of them can make thier favorite sides but For dessert I want a berry pie made by kid #2 (if she decides teaching and coaching ain’t her thing anymore, she could bake!!!). I would nod in satisfaction at the end of that day.
 
I know it already passed but sometimes a sliced roast is a nice substitute for a steak. Love me some smoked/reverse seared tri tip. Maybe my wife will read this for fathers day 😁
