Just prepped this baby for the Traeger tomorrow... Spatchcocked the bird and sectioned the leg quarters.

The white meat is a mole. It will be sliced...

The dark meat is a mojo/achiote marinade. It will be pulled...

The pellets will be mesquite...

Also making a giblet gravy with Chile and Adobo, black beans and rice, fresh guacamole and chips with the requisite accoutrements...
