Mmmmm...boiled peanuts!

Wife: I thought you didn't like boiled peanuts?

Me: I married into it. Can't help it when Dad and I sit around eating them every time there's a fair, tractor show, or ball game.

My dad's farm upbringing would come out when he ate too many of them and complained of the "scours". Dad's been gone for 13 years, but to this day I see boiled peanuts and think of my dad that way.
 
I am with you on the mayonnaise. It's Miricle Whip for me or nothing.

I was just telling my son about the understanding on this site, and most of our region, that Duke's is the only real mayonnaise. He made a comment about Miracle Whip to the effect that it was some of that other mayonnaise that went bad.

Let em soak overnight as they cool. Totally changes the flavor for the better! I usually cook 30-40lbs every other year for myself and friends. Usually early season peanuts before they fill out the shells.We did some testing a few years back and the soak is key. We tried adding smoked ham hack but that was just a waste of money. Cajun was ok but you loose the peanut flavor. We cook them and then we put them in a plastic cooler (lid open) or bucket (non reactive as aluminum of a turkey cooker pot is reactive) and let them cool overnight in the liquid. 9oz of salt 2-3ish gallons of water and peanuts to fill a 5gallon pot 80% full. Not salty tasting at all.. just right.

We call my good buddy's daughter "the squirrel" as she'll plow through a gallon bag before you can drink a coors. Hulls everywhere. Like a squirrel plowing through a pinecone. We brought out a bag at the pool for a few yankees... "oh no I don't like them" she tried them and ended up taking the bag home and comes back looking more. I freeze in gallon bags. To reheat from frozen pour them into a corning ware with lid dish with a bit of water and stick in the microwave.

salted roasted peanuts. no mayonnaise.
I don't even like deviled eggs if there is may involved. I will replace mayo with hotsauce and mustard for my deviled eggs though.

I get mine from a farmer's roadside stand in the fall in Farmville off 264 alternate. He's closed up now. If I had to have some now I'd drive to Mackey's Ferry and pick some up. It's worth the drive over the crappy canned, heavily salted, nuts. You can rehydrate "dried" but not "roasted" to rehydrate "dried" put them in a pot of water with a plate on top for a couple days. They're not quite as good a "green" peanut but are alright. No chance with "roasted"

This, I have found, is the key. I’ve seen a lot of people put their peanuts out for eating as soon as they’ve reached the desired consistency. They dry out quickly as they cool when you do that. I want them juicy when I open the shell. I don’t always soak mine overnight, but they have to at least soak until most have sunken to the bottom of the pot.
 
Thanks guys for the info. I guess I will have to make a trip east in the Fall. My Uncle used to live in The Florida panhandle -near "Mariana" and I would pick up a bushel every year. Had to move him in with me several years ago here in Asheville. Been missin my green boiled peanuts ever since. There was a farm right on 84 south that had gregory s and they were delicious.
 
I used to buy them from a crusty old guy boiling them in an iron pot over a small fire next to his wore out truck on the side of hiway 276 at Bald Rock headed towards Caesars Head and Brevard north of Greenville SC.

And on I95 today headed north from Charleston I saw almost as many of these billboards as South of the Border signs.

In a pinch, when all the bags I’ve frozen from the summer run out and I’m left with none of the stuff I’ve made until peanut season again, I’ve eaten those. Just the regular ones, no Cajun for me. I think Margaret Holmes Co. cans those in Dillon S.C. maybe?

I don’t know, but it was unbelieveable how many full color billboards with different slogans and pictures they had on I 95 in proximity to Dillon.

There was a fried chicken place on Hwy 17 in Jacksonville, NC call the Ark. Actually quite good too!

I remember back in the early 70s there was an old (70ish at that time) black guy who used to kick my ass, and took my money, on the pool tables at the pool hall on Court Street. During the winter I remember he would sell boiled peanuts at the Ark, which was at the end of Court street in a less than savory neighborhood.

It was 2 or 3 blocks from the proverbial "wrong side of the tracks." That was a rough area ' bout that time.

I may have a boiled peanuts hangover from losing so much of my small paychecks to that old man selling peanuts. Just a good wiff of the smell and I was in trouble too!

I have never actually measured out the salt out... just went by taste. And I tend to like mine on the salty side. I really ought to keep track of the amount of salt for consistency... and to adjust for other people's tastes, too.

And yes... let those puppies soak over night when they're done. Where this really helps is with all the peanuts with uncracked hulls...as the water cools, they absorb more moisture it seems.

QUESTION:

I've never used any other seasoning. Anybody else have other seasonings they like? I'm wondering if Old Bay might turn out well.
 
Being from Florida, Im used to all kinds of road side peanut vendors and Ive tried making them myself. Seems like I can never get them tender enough no matter what I do so I quit even trying about 30 years ago.. The lil country store near me sells me the big cans for $8 ( Peanut patch brand) and I eat them cold right out of the can. I just keep them in the beer fridge out in the garage but have to be careful how many I eat.. Found them to be the best natural laxative there is..
