Wife wanted something different for her birthday instead of one of my "amazing" cakes, so she picked these molasses sandwich cookies. They don't exactly look like the picture, but they taste pretty good. I didn't have coarse sugar, so I substituted some red sprinkle stuff of unknown origin.
I honestly prefer them without the filling, the cookies are really good. The filling is just confectioners sugar, crisco and marshmallow fluff... just too damn sweet.
