Monk fish. Totally Awesome for Chowdahs

We used to serve monk fish at the restaurant I used to cook at. Always thought it smelled awful and not a fish I would order as an entree but prob would do well in a chowder for sure.

Great in Chowdah and bisque.
Stays firm.
Broils well too. My wife seasoned up some. Delicious.
