My butt is on a plateau...

Been smoking a 15# pork butt since 1. It hit 165 around 4 and I double wrapped it in foil to bring it home to 205... it’s been sitting at 195 for almost an hour! I’m hungry! After it rests in a cooler for an hour, I won’t have a sandwich until 9:30 at this rate!
 
The plateau is a fact of life, the only question is, how long will it take? But you knew that going in. :D A 15-pound butt is a big one; I don't think I've ever cooked one that was much more than 9.
 
That's a weird temp to stall... Usually the stall is in the 150-170° range... 195-205 is like 20mins..
Mine always stall at 160-165. If it were to stall anywhere else I'd think my thermometer was broken. Lol
 
If the probe goes in like soft butter... its done... some are fine at lower temps.
Or increase the temp.. it ain't takin smoke after ~150ish... if its wrapped you ain't gonna burn it

Every piece of meat is different. In all walks of life. :p
 
I accidentally discovered the secret to beating the stall.

You start by setting your pellet smoker to the wrong temperature, then sit back and wonder how it's cooking so quickly.
