From all the chatter about it, I feel like I missed a treat at the 2nd annual meet and greet at battery oaks last fall. I didn't get around to where the crack corn was staged and only heard about it from here. Thankfully, the recipe was posted up.
The recipe called for jalapenos to taste, or something like that. I knew if I added them, there was no way my wife would have tried it. I didn't add any to my plate because I would have wanted the flavor to be in it, rather than on it. With that being said, this is not judging the dish, because along with leaving out the jalapenos, I added chopped up bits of the butt I smoked a couple of days ago.
So, my thoughts are, this stuff is good, really good. I think it would be better with the jalapenos. But, this stuff comes across as a tasty blank canvas. I mean, what could you add that would add a flavor or a texture? You could cook the recipe as is, dump it in a casserole dish, cover it with panko bread crumbs, and pop it in the oven a bit. You could do the same, but with your favorite shredded cheese. You could grill a steak or roast a chicken, chop it up and add it to the mix. Maybe you're a fan of celery? Cubed up potatoes?
Maybe I should just shut up and not mess with it.
