So the wife and I have decreed that next year we will be "doing us" for the Holidays and our wedding anniversary... sometime between October and December.

She mentioned Colorado, so looked at some of the comments all inclusive ranch packages, which I'm not opposed to but those are pricey, but you don't have to worry about anything else, however we prefer the "choose your own adventure" than the "guided tour" people.

Looking for ideas or suggestions to start the planning, not opposed to other places as well, but most likely out west somewhere.

Be aware (as I'm sure you are) but the time frame you have chosen can be filled with uncertain weather conditions. I lived there for about 5 years and the Oct to Dec time can be anything from 70's during the days to 2' of snow when you wake up one morning...

Just plan to be flexible and willing to make a change at any moment..
 
I went to Zion NP, about a month ago.
It was beautiful, and they claim to have a fairly mild winter.
 
If you take a gun there, don't forget the 15 round magazine limit.
 
Colorado is great even after it starts snowing. You can go cross country skiing, alpine skiing, snow tubing, dog sledding, snowshoeing, snowmobiling, and lots of other fun stuff.

You can get to the Great Sand Dunes National Park fairly easily from the Valley and you're about 2 hours SSE of Colorado Springs and about 3 hours from Denver. (although I will say that I'm beginning to hate driving I-25 between the Springs and Denver)
 
Big Bend National Park is pretty awesome that time of year.
