Now that's a big cat!

With the state record at less than 70lbs I would be targeting that record were I a Floridian. That kinda sucks that his fish was ineligible.
 
Actually, probably not at that size.

Not saying I wouldn't fry that sucker up, but relatively speaking, smaller cats are better eating.

All them years marinating? It's bound to be awesome!
 
Y'all don't know how to "blood" a catfish? We used to catch a lot of big old flatheads on bank lines when I was a kid. Whack the end of their tail off & hang 'em for 15 minutes or so. Got rid of all that "muddy" funk.

My brother in TX soaks them in buttermilk and then fries them. Like anythigng else there is always an old school way to handle it.

We always chunk up the big ones into nuggets and soak them in buttermilk overnight with a scoop or two of Countrytime lemonade powder in it. We haven't had a complaint yet.
 
Yep, but either are huge carp and I've seen people take them home. Some folks will eat anything.

Carp are fun to catch, because they get to pretty big size and are quite the fighter. But I never could stand to eat Carp. Mom, however, wouldn't hesitate to bring the Carp home and fix it for dinner.

Whenever I went fishing with Mom and caught a Carp, I'd bash that sucker with a tree branch and toss it back.

My favorite Carp recipe:

Nail a Carp to a Cedar plank
Liberally apply butter all over the Carp
Cover that sucker with tons of your favorite dry rub/seasonings to the Carp
Back at 350F until brown and done
Pull it out of the over, pry the Carp off and toss it in the garbage, then eat the board.
