Basically, I timed a pot of eggs. Throwed them in ice water afterwards. When I finally peeled one, the center was maybe medium? I thought, "Oh no!" I knew I would be fine with them, but my wife wouldn't eat them.

Good lord.

I couldn't believe how good my yard bird's eggs were at half mast. So velvety. Not chalk-like, like almost every boiled egg I've ever had since birth. I almost shed a tear thinking about how I could have been enjoying boiled eggs all this time, instead of having to drink something just to get them down.

I don't think I'll be giving any more eggs away, well, unless someone's wife wants to trade me something for them.

Now take a few and get some spicy breakfast sausage and some prosciutto. Hammer the sausage flat and wrap it around the egg. Wrap that in prosciutto and drop it in hot oil...

Best Scotch eggs ever...

Crap, now I'm thinking about thin sliced Black Forest ham & Emmentaler cheese on a fresh brotchen, cuppa strong, rich coffee & a slice of that chunky brown chewy bread slathered in either marmalade or Nutella.
 
I like 'em soft boiled European style, with a runny yolk.

My first dipping egg was had at a breakfast buffet in Erlangen, Germany. Cold cuts, cheeses, smoked salmon, jellies, pastries, fruit, black damn coffee. Oh....

I could eat that every morning.

And it's a college town and everywhere is uphill. Gals in their sixties were built as well as the ones in their twenties from walking and biking. Many a seed were spilled that week.

If you ever happen to get an immersion circulator (sous vide), you can do some really neat things with eggs. Basically you pick the texture you want and use the correct temp to get it. The absolute easiest way to make a bunch of poached eggs.

I had wild pork filets, with mashed tater patties fulla chopped pork belly & fried, covered in mushroom grave & the candied lingonberries on the side at the Augustiner Brauerei in Munich. OMFG good.

I always said I joined the Army to see the world, but once I got sent to Germany, that got refined to eating & drinking my way across the world.

There is definitely good food here, but I never had a bad meal in Europe. Tripe, snails, horse, ham and cheese sandwiches, steak tartare, fries, doners, kebabs, poulet, the house-made horseradish mayo.

The Irish coffee. Take me now, Lord.

I steam them in a double boiler starting with room temp eggs.

Big fan of soft boiled eggs, but need 10-12 min for deviled eggs.
