Any of you folks ever modified Old Hickory knives? Managed to score 10" butcher and a 3 1/4 parer...

Took the butcher down to a 5 1/2 Kephart and made the clip point parer into a drop point...

Reground the blades, removed the handles and put them in an ACV bath...

Went with canvas micarta for scales...

I found a couple of those in my MIL’s kitchen after she passed. They were dull like butter knives so I used one to practice sharpening with my belt sander. It’s held an edge for years and it’s so GD sharp that thing has caused three people to need stiches from mishandeling it. I like what you did with these!
 
Very nice. I've done 4 or 5 styles. Kepharts, Nessmuks, skinners, and my favorite, Canadian willow leafs. All of them packed up at the moment, but this Osage Kephart I made was kicking around on my dresser.

Thanks for the vote of confidence, but I'm still in the tinkering/learning stages; nowhere near good enough to start selling to folks...but I'm working on it.

Totally understand. But even with the warts and all (though I can’t see any) some folks like the rustic look. Very “Quigleys boot knife” lookin.

The steel. Old, simple, easy to sharpen carbon steel. Plus they have soul. Let me know and I can throw a few on your next "shipment".

They are just basic, made in the USA, utility knives that have been around for years. A good solid knife with good steel and very reasonably priced.
 
If you're wanting to do stock removal on something besides an Old Hickory, try the Dexter Russell Green River series. A few bucks more, but they don't have all the Old Hickory no-meat-sticking air channels. Same super dependable, well treated 1095 and brass rivet construction. (these are MSRP prices. You can find them around 15 shipped)

They're made like they used to make them: no Swiss chef douchebag name on them, no fancy handles, just great steel that does the job like a champ.
 
That weird little squirrely, gabby fella on the left wall at the Charlotte gun shows had a bucket of the butchers for 5 bucks a piece. Not sure if he goes to any other shows.
 
Finally managed a decent photo of a few stock removal mods. Mostly Ontario/Old Hickory, but a few old Queen Cutlery Co thrown in. Gave a few away, but I need to learn how to make some dang sheaths.

Left is an old Queen kitchen knife, Red Oak cross cut scales
Ontario Butcher to Kephard mod, Sourwood scales
Ontario Skinner to Canadian Belt Knife mod, Maple with slight spalt scales
Ontario Butcher to Kephard mod, Osage Orange scales
Ontario Skinner to a bit sweeping belly skinner, Walnut scales

I jimp all of my blades an inch or so on the spine.

What's the price on these? I keep forgetting I need them. I saw some in hillsville this past weekend. They were very used or way over sharpened.

Just depends on which one you get. We keep about 10 different models. Most are around $10.

We are part of Ed's Gun Shop in Southern Pines, but we are in a separate building and kinda do our "own thing".

It's just a small shop, packed full of stuff. Started out with a "prepper" slant and it evolved more into a "knife store" over the past three years.


It may seem kind of odd to not have a point and click website, but, that is also what allows us to sell some brands (like Benchmade, ZT, Bark River, etc) significantly cheaper than anybody else. We don't have to meet the Minimum Advertised Prices. Take Benchmade for example. I can whip even Amazon's butt price-wise. I can beat anybody on Benchmades. But you give up the convenience of click ordering, and I don't always have every model in stock. But sometimes when that translates to a savings of $60-100 per knife folks think it is worth the trip.

And we'll ship under some circumstances. But honestly, when it comes to Old Hickory and some of the "cheaper" knives, most folks will just order online and we understand that.
 
you can sit on the porch and BS half of the day away.
We are down to ONE LGS now where you can go a sit with the last of the great "cracker barrel philosophers". I yearn for those old times. We try to provide it here. Most who come here are also "at home". In 15 years we now have had to ask 3 to leave and not return. I am sorry your place is so far. I would love to visit. Our number one concern here is to maintain The Old South feeling. If you have that, cherish it, support him, and make as many memories as you can. I fear we are in peril.
