Oyster Fritters

In New England it was clam fritters. With lots of small clam pieces.
Part of the secret is in the type of oil…
I think it was Crisco but am not sure.
 
Person I call my Stepmother is a 95 year Black woman that has taught me a lot about life and cooking. Shes still kicking and feeding masses for cheap and all of it tastes great. She taught me one on one a few dishes, but come family time she points to the grill and won't allow me in the Kitchen. Its a small kitchen and she has a trusted group that she allows to help her and I'm NOT one of them. 😖
