You've reminded me of an idea I had to use a hot wok to make pancake bowls, by sloshing the batter around until it firm s up.Something that makes me laugh every time I read a pancake recipe:
"Makes 16 four inch pancakes."
Four inch pancakes? BWAHAHAHAHAHAHA!
I grew up with skillet sized pancakes! And when we used the griddle across two burners on the stove, they were STILL skillet sized!
Honestly, you had to worry about syrup overflowing the plate if you weren't careful, because the pancakes pretty much covered the plate!

The inside won't be browned but it should cook, then you can go hog wild with the fruit etc and it won't escape.
Or maybe drop another heated smaller wok inside to make a bowl press and brown both sides.....
This reminds me, though I’ve never understood why, the first one never has that uniform brown color that subsequent ones get.The temperature should be hot enough to pleasantly brown the pancake on its first side at the point where it's ready to flip.
