Potato soup

Potato soup is one of my favorites.

I cook chopped bacon and then reserve it, saute onions, garlic, peppers, and carrots. Add flour to make a roux. Cook out the roux and then add a little stock, a little buttermilk, and a good bit of whole milk while stirring. Add a healthy amount of salt and black pepper, a little smoked paprika, cayenne, cumin, and coriander. Add potatoes, bring to a boil, reduce to simmer. Once the potatoes are cooked, check for seasoning one last time and serve. Top with reserved bacon and cheese.

This is very similar to mine...once the potatoes are tender, I take out about half the soup, puree it, return to soup pot. Makes it super creamy while leaving potato chunks in it.
Oh, yeah...after initial browning of bacon, I remove it until after pureeing. Add bacon back with the puree so its still chunky too.
