I still do it with coals also, just didn’t have any yesterday. I got to say it’s almost a set and forget. It’s too easy. Finished product is as good if not better. I’ve been surprised by the pellet grill all year.You are a traitor to your southern culture!
No basting or mopping, I do wrap. I open it as little as possible. These shoulders have a lot of fat to render, they will stay moist if cooked just right.They look great! Did you baste them any?

Reverse in a Spread axle without a dump valve separates them even more. Some of the van guys think they are experts backing, they won’t jack one of those flat beds loaded like they usually do.There is only one gear that separates the truck drivers from the wheel holders. REVERSE.
