Probably would've been a great morning to be hunting, but I didnt want to be in a hurry for getting these ribs done for my brother's birthday. Pretty standard rub and a mix of apple and cherry wood. Smells great so far.
I personally think the Boston butt is the ultimate in smoked meats. But my brother specifically wanted dry rub ribs, which I definitely cant complain about.Boston butt on mine about an hour and a half in. In about another hour or so when the bark has built up just right, I'll take it off, inject it with some apple cider vinegar, hit it with a little more rub, and wrap it in tin foil. Finish it wrapped up for about another three to four hours until it hits about 190-200 internal.
Let it sit 20 min or so and it should pull apart like a cotton ball lol.

Sorry, I left out I did it at the start, too. No particular reason why I do it twice, I just do.The injecting after cooking a while is different. Where did that idea come from? Educate me. Why not inject up front?
