Looks good. Sometimes we do something similar except put it in a baking dish in the oven and then put cheese on the eggs and let it melt.
 
Looks dang good, and a lot better than my cereal this morning!
 
All I had was some well done bacon and black coffee.
 
Did a little omelette action myself this morning.
Left over Pakistani BBQ chicken and some mushrooms.
Every Sunday I empty the weeks leftovers into an omelette.

I'm in the process of figuring that out...
My neighbor is a nice young Pakistani girl and after telling her how I almost starved to death in Iraq, and how amazing the grilled/BBQ chicken was there, she started making it for me.
She uses some mixture of homeade ground ginger, her own yogurt and a seasoning blend from her family. She just brought me all the ingredients to do my own and now I just need to have her show me how she does it so I can put it in the sous vide!
Once I get all the details about what's in her seasoning and how it all comes together, I'll post it up.

I would say that's more of a frittata than an omelette. Much better in my not so humble opinion though. :p
