A recipe I enjoyed in Spain, or rather my fusion take on it... Tuna Cadiz... Normally it would be a tuna steak with chorizo and potatoes with a chicken egg on top but I don't do mundane...
My take... Asian-Mexican Fusion take on a Spanish Dish... Sesame seared Ahi tuna, topped with a wasabi aioli and chives, over an over-easy sriracha duck egg, beside a bed of baby bok choy tossed in a champagne vinaigrette with seedless cukes and avocado, accompanied by Mexican chorizo sauteed fresh asparagus... Along with a nice full flute of dry Cava... Espectacular..!!!
