Cajun in da Carolinas
Trying my 1st lacto-fermented carbonated soda. This is (hopefully) Tepache.. a south American carbonated soda. Most Tepaches have Pineapple and all sorts of other spices (hot chilis, cinnamon, star anise, etc.).. I started with simple pineapple & ginger. The gallon jug has been fermenting for three days. Today I filtered and bottled... a few more days in room temp and it should carbonate with continued fermentation under pressure therefore natural carbonation of the drink.
Next week... gonna give home brewed naturally carbonated root beer... gotta start a "ginger bug" for that.
