Chappy's Mountain View Grill:
Great burgers grilled over wood coals. Yes, it does get a mite hot in the summer time hence the heat guard in front of the fire.

Silver Cliff Mountain Inn and Restaurant:

10" breakfast burrito (they also have a 6" and a 12"). Choice of ham, sausage or bacon along with homefries and scrambled eggs. Smothered with Southern Colorado green chili pork chili.

Beautiful. You considering Colorado along with Texas or was this just a fun trip?
 
My wife is wanting to see Colorado. She has never been there. I think it has been 15 years or so since I have been there. I better not show her your photos or she will want to go now. Beautiful place!

Take her out in the back country if she wants to see the real Colorado. The Denver/Boulder area has been ruined (at least for living) by the left leaning Kalifornia expats that have moved in. Colorado Springs is still ok and you've got Pikes Peak and the Garden of the Gods you can visit. I understand that the Durango area is beautiful but I haven't gotten there yet. Steamboat Springs (at least years ago) was a nice area as well.

FYI: I-25 between Colorado Springs and Denver sucks. I've yet to drive that stretch without seeing (or being in) at least one traffic problem.

Yeah, last time I was there I spent a week in Colorado Springs. I loved Garden of the Gods, it was one of the highlights of my trip. The wife has never seen any of it, only photos. The time before last, I spent a little time in Greeley, it was okay.
 
Manitou Springs is neat in a hippy sort of way. And we like Old Colorado City which is in the Colorado Springs area.

You need to come down to the Westcliffe/Silver Cliff area at some point. It is a beautiful valley where the ranchers go back generations. And you can go see Bishop's Castle, which is one of the strangest/neatest (depending on your point of view) things that I've ever seen.
