Since I've gotten my Tacoma I've made some additions how nothing major yet, but I can see how it adds up, floor mats, door sill protectors and mud flaps and I'm $300 in.
My question is how does everyone track what they add to their vehicles, especially if you have a insurance claim.
Simple spreadsheet with additions, receipts, photos of additions?

Not sure even having a spread sheet would help much with the insurance companies.

Check with your insurance company to see if they will cover mods and how they assign a value to them.

Save your receipts. Take pictures

When something happens and the adjuster says some stupid sh*t like "uhh, we don't know what this stuff is so we can't cover it". Yes, it happened to me. Ask for an independent adjuster to review the case.

All a spreadsheet Does is remind you of money you didn’t spend on guns

...And guns depreciated waaayyyyy less than used car parts. Minor mods to a vehicle will not add up to anything by the time depreciation is factored in. Future buyers won't pay much more and insurance doesn't care.

I believe you have to have "comprehensive" insurance to have non-factory covered. Liability cause you have to have it by law, collision to cover your vehicle, and comprehensive to cover anything not covered by collision. If someone broke into your vehicle and stole your radio, it would be covered by comprehensive.
Just FYI...
