What scope and mounts for pre 64 model 70

hi all , I have a 1955 and 1956 pre 64 model 70 actions that I’m doing customs builds on they are both the standard .30/06 actions from that era, problem is I have heard all kinds of things about scopes hitting bolt handles and not getting eye relief right on these rifles , so my question is what is a recommended setup for these rifles , they are both going to be hunting rifles so I would like a really good optic and fixed mounts , nothing detachable , budget is unlimited do you guys know anything that will fit , also I would like to keep this setup mounted as low as possible ! Thank you very much !
 
Not sure I can offer any solutions but here's a few pics for reference.

Rifle is a pre war ( 1938 ) that my dad bought new, .257 Roberts. Scope is a Unertl Hawk 4X on Buehler one piece base. Bolt handle has been ground.
