Ok I'm making a big meal for a group of people and I'm starting off with beef brisket. What I'm looking for is ideas for other meats/main dishes to cook as well as good side dishes. Far as meats go I've got most cuts of pork, also got deer meat, and chicken all of which I can and know how to make into a variety of ways. Friends tell me my BBQ is awesome no matter the meat. So ideas on sides??? So far I've been told green beans and taters would be good, I can get a variety of greens easy. Corn on the cob is easy. So throw out a bunch of realistic ideas please not just oddball crap. I'm serious for a change.
I'm dead serious for a change
Thanks Eddie

Roasted Brussels sprouts w/ bacon
Sweet potato soufflé which is easy to make. (Sweet pot, eggs, sugar, vanilla extract, milk and salt. Topping has brown sugar, pecans, flour and butter)

Banana pudding, with meringue :D

Geeze, green beans have been done to death!! I'm all over the lightly roasted Brussel sprouts as long as they still have a little crispness. Since you're going to be cranking the oven why not toss some small, white potato's that are quartered and tossed in a little EVOO, garlic salt, black pepper and pepper flakes. The potato's shouldn't be over 2" in diameter before quartered.
Mix them with the Brussel sprouts and roast 15-20 minutes in a 400 degree oven. Remove while still slightly crispy and they'll finish cooking on their own.
If you want to go all out with this dish add the tips of Asparagus to the mix (also coated with the EVOO mix) anf you got something that goes with any meat PLUS... you got all your groups.....

Cast iron pan, bacon grease, small hash browns cooked until nice and crusty, toss in green beans and small green peas, corn if you wish.
Cover and cook until the vegs are nice and warm/hot.

I do a green bean and mushroom dish that a lot of people like. Saute some shrooms with butter and a little garlic. Boil some fresh beans to almost done. Then throw the beans in the butter, garlic shroom mix. Voila. Veggies.

Cauliflower steaksnon the grill are good too. Slice them, brush with some olive oil and use your favorite seasoning. Grill just enough to get a little char and color.

Find an asparagus bomb recipe. They are good too.

Asparagus with butter and garlic baked in the oven is amazingly delicious and so are fresh snaps. A sweet potato soufflé would be nice also and maybe some baked Parmesan crusted avocado slices?
