What to do with left over corned beef?

Make breakfast of course!

When your wife is a red headed, blue eyed, almost milky white completion (except for the freckles) you get to have some interesting meals. This one however she had never made and I was shocked. Needless to say I love me some hash, and this was the perfect opportunity to make some up.

Sorry no real recipe just leftovers and eyeballs.

First heat the pan up with a chunk of butter a a squirt of olive oil and then toss in some diced onion till they're brown.

Then dice up some taters and toss them in. I like some salt, pepper, and cayenne pepper in mine. And a chopped up slice of leftover bacon (because it's bacon and shouldn't be leftover).

Chop up the corned beef and toss it in after the taters are softened up a bit.

Mix it all up

Now the best part and the best reason to use a cast iron pan. Smash it down flat so you can get you some burnt ends. Let it cook a few minutes and then flip it a bit and repeat.

I'll be back... gonna shove this down. For a real treat mix all this together with the over easy eggs. Doesn't make for a pretty picture though. Lol
 
I don't mix mine. I top the hahbrowns with the beef. And tobacco is a must for me
 
Man that sure looked good. Makes me hungry and I just ate....maybe the wife's right and I am turning into a fat @$$.....
 
That is a dang good looking breakfast!

That said - never have had leftover corned beef before, sounds like you need to join the CPC - Clean Plate Crew.

mmmm....Hijack Time: I can NEVER keep my cast iron skillet cleaned and seasoned.

I did the wash, then oven dry, then crisco wipedown, then back in the oven to bake it in....Then wiped with dry towel and put in cabinet.

Threw some bacon in and BAM! stuck bacon bits to the pan and couldn't scrape them off.. Had to use hot soapy water to clean
Got a metal spatula?

Even if it stuck and you couldn't get it off doesn't mean you should have used soap.

If your gonna start over on a pan just put it on the stove and put water in and boil it. Use a flat spatula across the bottom as gentle scrape while it's boiling and it will come off.

There's also chain mail scrubbers you can use that will take it off(check amazon). Wouldn't have to use soap or start over using this.

Were you certain that your had a good finish? How many times did you bake it in? And crisco isn't the hardest finish but if done right it still should handle bacon.
