We do the big, huge family supper on Christmas Eve. So, by this evening, we've had three days of turkey and ham and are pretty tired of it lol.

Sometime this evening, I'll chop up and freeze the leftover ham and turkey. During the next couple weeks, I'll do a run of pintos with the leftover ham and bone in them and I'll do a run of either turkey gumbo or potato soup with the turkey chopped in it.

What are you guys favorite recipes for the holiday leftovers?
 
French dip sammiches tonight. :D

I'm doing the same thing that I do with any other food; extract all the nutrients I can from it, and discard anything my body doesn't use.
 
bottom line: they are next week's menu for lunch (breakfast?) at work.
right now, don't want any more turkey, ham, etc...but next week i will.
 
Just enough leftover for tonight's dinner. Yahoo!
We always have a slew of leftovers, and of all the folks here, I figured you would have a great recipe to use them in lol
I went fishin...and didnt catch a thing lol :(

We make stock out of the turkey parts and freeze it. We freeze ham, turkey etc... ham bone is used for New Year’s Day Hop and John. I freeze different parts and different cuts for different purposes. Nicer parts of the ham are
frozen for ham steaks. Parts for soup or to flavor greens. Turkey breasts are carved for Thanksgiving in spring & summer which is a tradition in my house. We make some mashed potatoes, stuffing and the turkeys already done.

We make turkey pot pie with the turkey meat. We don’t do a full pie but make the filling put it in a casserole or cast iron and cover it with drop biscuits. You can make it and freeze it so all you have to do is defrost and make the biscuits. Ham salad also gets made if we are in the mood.

Often if there are family members over they take leftovers as well. This year it was just us so there is less and we changed the meal accordingly.

We have not cooked our prime rib yet but what we don’t eat we slice into individual steak and freeze them individually. Defrost and pan sear them later for quick dinners.

Everything gets consumed.
