With rain on and off all weekend, I'm cooking indoors today. Just the first strips of a pound of bacon being fried up in an old Wagner skillet.

I'm thinking we're going to have steel cut oats and bacon.
I've never had steel cut oats before, only rolled or the instant kind.
 
Steel cuts are just the oat kernel that has been cut rather than rolled. You've got to cook them about 20 min. but they are crunchier than rolled oats.

4 to 1 water to oats if you want to cook them. Add a little bit of salt and some butter to the water. Then I get the water boiling, dump in the oats and reduce the heat until I've got a slow simmer going. Stir occasionally; more frequently as they absorb the water.

You can add sugar to taste if you want. We don't because of my Type II. Maple syrup is really good in them. And I'll add blueberries if we've got any.

We get ours from the Old Mill of Guilford but if you look in the store you may be able to find "Irish oatmeal" which is the same thing.

This morning toasted Whole Wheat Thomas's English, two strips of Turkey Bacon, and one egg fried.. With a small splash of syrup.

Steel cut oats are really flavorful if prepared right. I find that mine cook easier and faster if I soak them in water overnight in the fridge prior to slow cooking on the stove top.

4:1 ratio as stated, but I use Almond milk (I know...) and I put them in the oven the night before...200temp.
Makes 4 srv.

Talk about yummy goodness the next morning!

Add some honey & Kerrygold butter....

Had shredded chicken nachos last night
Ive done this many times in the past, and it rules: take leftover chicken and cheese, scramble up some eggs with it, ENJOY.

Was good. Had some peppers and onion in there too.

Indulgence.

Fried Spam, eggs over medium, "Tuscan loaf" toast, bowl of cantaloupe, apple juice, French roast coffee.

I actually bought two 20pc and stuck one in the freezer. I found out if you throw leftover nuggets on the grill, they are actually better than when you first get them.

My wife rolled her eyes when I revealed my plan. Lol.
 
Not quite breakfast but we went for brunch with friends at Altons in Cornelius. I had Chicken and Waffles, with a side of Bacon.

This morning for me a toasted Whole Wheat Thomas's English muffin, two strips of Turkey Bacon, and one egg fried for me. My wife had a Eggo Waffle sandwich with a fried egg, regular bacon. Both of our sandwiches had a small splash of syrup on them.

Hmmmm, that Eggo sandwich sounds very interesting. I just put it onto my to do list.
