Did some hot dog, hamburgers and good brats on the grill this afternoon. Chased it with cold beer and sweet tea!
 
This wonderful concoction has been simmering for a couple hours now... Homemade bone broth, Pilot Mt Pale Ale, and Organic Apple Cider Vinegar base with, Bok Choy, Portabella, Shallots, Bacon, Cilantro, Serrano Chiles, and a bunch of fresh herbs and spices...

Time to put these bad boys in the oven to serve the soup over...

So uh... Turning in my man card but giving this a try. Prosciutto wrapped chicken stuffed with mozzarella. Will finish it off on the cast iron pan with olive oil

Duuude!!! Prosciutto is just Italian bacon as far as I'm concerned....

Ended up just a touch on the salty side but yea it was good and that darn fancy cooker has spoiled me

I learned long ago to hold the bulk of your salt to season at the end the cook. If you think you need a teaspoon cook with a half, then add to taste when finished. Can't take it back out...

I used a personal favorite, Everglades seasoning but it is definitely on the salty side. Combined with the prosciutto it was just a bit more than ideal. Still edible but lesson learned. It can't really "cook out" trapped in a bag I suppose

Yeah, I learned to hold back on the NaCl many a meal ago... Even if it weren't in a bag, the loss of moisture would probably have concentrated the salt rather than cooked it out.

And keep the Man Card. The courage to experiment on food with yourself and/or your loved ones as guinea pigs is a sign of great courage.

So say I.

Friday night seafood at home this weekend. The scallops were running a little too small for my taste so we left them out this time.... added more shrimp instead.

Salmon
Shrimp
Spinach
Rice Pilaf
Cornbread

Still made my lips smack. lol

You had me until you got to the rice pilaf. Not that I don't like it, but since I have to limit carbs it just isn't as "carb worthy" to me as cornbread is.

I'm cheating, I ordered Chinese to be delivered. Sesame chicken, hot and sour soup, and beer.

Went Old School tonight!

Veal Scallopini with mushroom sauce, simple Italian bread toast, green beans sautéed in olive oil with garlic, steamed littleneck clams with clam broth reduced with unoaked chardonnay, lime, & garlic, accompanied by a glass of Kim Crawford rose'.

Lis' compliments to de chef were enthusiastic. I may have a good night...

Smoked and then seared Ribeyes, roasted brussel sprouts with bacon and blue cheese, Brazilian Cheese bread (Pao de Queijo) with roasted garlic butter.

Just simple summer food tonight: burgers on the grill, corn on the cob, baked beans, chips, and watermelon, all to be shared with my grandchildren. And cold beer, to be shared with their parents.
